My knives are tested every day under extremely heavy cutting conditions. Thanks to the high-carbon and ice-hardened steel these knives keep a nice edge. Other chefs comment comment on how sharp my knives are . Very well balanced as well. The grain handle is coming off which is the only negative thing but didn't let that get in the way of a perfect review

I bought this knife at a trade show after watching Paul Hellman's demonstration. It is an absolutely amazing kitchen tool and the 10" chef knife looks as good as it performs. The weight of the blade is perfectly balanced by the tang.
Included with the knife is a protective sheath that keeps the blade from taken any damage when it is not in use.
This is an extremely well-made knife. I prefer a longer chef's knife with a flatter belly than the traditional 8" French design, and this knife fits my preferences very well.
The balance is exactly at the bolster, which puts it between the first and second fingers when usng the one-finger pinch hold I use. Although I don't use a handle-only 'hammer' grip, I tried it and think it would be comfortable.
The wide spine is very useful for more delicate point work.
The riveted handle is a joy to look at, and feels very good.
The factory edge is very clean, and is easy to align with a few passes of a steel. The exceptional hardness of the edge requires at least a touch-up with the steel before use, especially if you are about to do a large amount of hard cutting (e.g. a commercial kitchen).
My only (slight) suggestion for improvement would be to round the forward edges of the bolster slightly for long-term comfort.
Im a chef and I use this knife daily for everything I do, I have retired my henckel because this GW is so much more useful, a must buy!
