Great for chopping small foods such as onions, shallots, garlic, chilies, etc. I love to cook and I have a large set of G&W knives but this knife is a must!

Great Knife. Bought one for myself because I had bought one for my son about 5 years ago and have always been impressed with how it feels and how well it holds an edge.
I use to cut meat for the Chart House Restaurants, so I really appreciate the value of good knives. Key to a good quality knife is the steal quality and how easy it is to keep a good sharp edge. There is nothing more dangerous than a dull knife and most accidents are because the knife will not cut easily and the resulting force you have to use to get the knife to cut forces accidents where pressure exceeds cutting ability because the knife is dull. These knives are extremely easy to keep sharp and using the diamond sharpener is the key. Use it before every use, just a couple of swipes will help he edge to last for ever.
Beautiful knife! A little heavy compared to the Japanese equivalent and the brisket knife is perfect.
