    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal or glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
    • Maintain the knife's cutting edge by regularly using a honing steel. Always hand wash and dry right away.  Never leave them sitting in water for extended periods.  They can rust and the pakkawood can swell.
    • Sharpen as needed. With regular use and honing, your knife should not need sharpening more than once or twice a year.
The honing steel straightens the edge.  It does not sharpen.  The diamond steel should be used approximately once a month or when your knives don’t feel sharp after using the honing steel.  The diamond steel has powdered diamond dust to remove a small amount of metal to get your edge back.  If the diamond steel and honing steel doesn’t work its time to use a V sharpener.  The V sharpener will strip off the old edge and put on a new one.

I received a Gunter knife set a year ago. This offset knife is amazing. I use it as work alone with other bread knifes and nothing cuts like this one!

This is a special price of Williams Sonoma. Then this is the best quality for my life nevertheless I have used Japanese famous knives made in Kyoto for a long time. And a remarkable point, Michel Bras knife user will be able to have a professional sharping service in free of charge. I can use these knifes without anxiety.

      Pros: Sharpness, Shape

      Cons: High-Maintenance

I have a set of the Shun Classics and this set set. It is the perfect knife out there. I have owned Henckels and Global and the Shuns are the best. A tip for guys: if you plan to buy this set, be sure to tell your fiance or be prepared to buy her a very expensive purse. I wish Williams-Sonoma would include a knife block whit this set. $550 for the matching block is very steep.

I have been using a cutco 32 piece ultimate set. Just bought this set for christmas. If money is not an issue, this is a wonderful addition to any kitchen.

      Highly Recommended.

    6. At this price, they could have individual sheaths review by macbera - Deerfield Beach Florida on 11/6/2013

These are wonderful knives and they are a great addition to my kitchen. The service offered by Michel Bras seems outstanding (but I haven't yet used it).
And by the way, Williams Sonoma sells them cheaper than the list price in France, so don't hesitate a second if you really want them.
I don't give them a 5-star rating because at that price they could definitely come with an individual protective sheath or scabbard.

I love these knives! Bought them today after seeing them on Oprah - can see why they are one of her "favorite things"! The paring knife peeled & sliced very juicy pear beautifully for tonight's salad (with gorgonzola & spiced pecans - yum!) the Santoku sliced tough skinned tomatoes & tri-tip like butter. I love that I won't have to sharpen it before each use like I do with my steel knives.

I bought this knife set about a year ago and it has done a great job cutting my vegetables and meats. I would recommend this product to a friend. But beware: You do have to take really good care of the titanium. I always wash them by hand with mild dish soap and wipe them dry after every use and then put them back in the knife block. Even with extra care, the titanium seems to spot and wear over time on my most frequently used knife, the 7.5 inch Santouku. It is just the nature of titanium--as a transition metal, it will be sensitive to oxidants and reductants to a degree, so careful about cleaning! On the bright side, it looks well-used, just like a well-made copper pot develops a rich patina over time, the patina on the titanium looks rustic, yet classy.
Overall, I am very happy with my purchase because these are truly unique from the other brands in terms of design and ease of use, and I have previously used Cutco, Wustoff and Henckels.

I bought this set of knives for my college-age son for Christmas, as he likes to cook as much as I do. I have a set of my own and use them daily. Everyone who tries them, loves them. I have probably sold 15 sets of them to my friends. I treat them respectfully, only using them on wood or bamboo cutting boards, no cutting paper or plastic or anything else. I wash them immediately so they are ready for the next cut. I don't even put them away most of the time. Can't miss purchase.

Pros: Easy to Use, Quality, Balance, Easy to Clean, Sharpness, Weight, do not stain or hold odors
